Chef Lala Da Ideas Para El Regreso A Clases

Nueva York - Con el regreso a clases vuelve además el “corre corre”, la agenda llena de actividades y el estrés de la preparación de las comidas y meriendas diarias, situación que muchas veces ocasiona que los padres elijan los alimentos equivocados para la familia.

Nueva York - Con el regreso a clases vuelve además el “corre corre”, la agenda llena de actividades y el estrés de la preparación de las comidas y meriendas diarias, situación que muchas veces ocasiona que los padres elijan los alimentos equivocados para la familia.

Pero el poco tiempo no puede ser una excusa para descuidar la alimentación y por ende, la salud familiar. Así lo asegura la chef, nutricionista certificada y oradora motivacional Chef Lala, quien no acepta la frase “no tengo tiempo” como pretexto para comer mal.

“Tú eres lo que comes, lo que consumes. Si nos tomamos en serio esta frase, cuando le estás dando algo de comer a tu hijo enseguida pensarás qué es lo que eso (la comida) le va a proveer. Si le das muchas golosinas a tu hijo, eso es lo que él va a ser, una ‘bolita de golosinas’”, comentó la chef de origen mexicano, invitada frecuente de numerosos programas de televisión como “Despierta América”, “Today Show”, “Dr. Oz”, entre muchos otros, y autora de varios libros de cocina.

A la hora de ahorrar tiempo

Para Chef Lala, si de ahorrar tiempo se trata, es importante planificar elmenú semanal. Por ejemplo, cocinar varios platillos los domingos que se puedan utilizar para comer varias veces, haciendo sólo pequeños cambios o ajustes menores.

“A mí me gusta preparar algo que me va a servir para usar dos o tres veces en la semana. Por ejemplo, con un pollo entero al horno, puedo hacer un caldo, una pasta o unas enchiladas. Lo único que tengo es ensamblar el plato nuevo”, asegura.

Uno de los platos favoritos de la Chef Lala a la hora de ahorrar tiempo y dinero son los caldos o sopas, los cuales según ella “ofrecen todo en una misma olla”.

“Con un caldito bien rico puedes tener proteínas, carbohidratos y grasa saludable, de manera rápida y fácil. Y sabes qué, los calditos de albóndiga, de res o de pollo saben mejor recalentados. Al día siguiente están más ricos”, agrega la chef, quien está trabajando con la marca Mazola para promover los sobrecitos de caldo, los cuales dice son parte de la cocina latina. “Yo me crié con el consomé de cubitos, pero con los nuevos sobrecitos no tengo que esperar a que se disuelvan. Conservo la tradición con la que fui criada por mi abuelita y mi mamá, con el sabor tradicional”.

Otro consejo importante de la chef es comer alimentos naturales, como frutas y verduras, que además de económicos son rápidos de preparar y muy saludables, “en vez de comprar papitas fritas o golosinas, que no tienen los nutrientes que necesitan nuestros hijos”.

Además, dice, los padres tienen que tomar las riendas a la hora de decidir qué se come en casa, ya que son ellos quienes tienen la responsabilidad de proveerle a los hijos las herramientas para crecer de una forma sana y saludable.

“Es como cuando nuestras abuelas decían, ‘la zanahoria es buena para los ojos, la leche para los huesos y los dientes’, hay que pensar así en lugar de ‘déjame darle de comer para que se llene’”, señala. “Los niños no mandan, mi mamá no me daba menú, ella decía ‘esto es lo que vas a comer’ y eso era lo que yo comía”, concluyó.

Durante muchos años la Chef Lala no solo se ha dedicado a crear deliciosas recetas, sino también a cuidar que cada una de ellas sea tan apetecible y digerible para cualquier persona, pero especialmente para un diabético.

Proveniente de una familia donde la diabetes es un factor médico hereditario que les ha afectado, cada receta y cada proyecto en el que la Chef se involucra está pensado con la finalidad de prevenir y cuidar al que ya padece algún tipo de diabetes.

Pero también como una mamá profesional que tiene que atender a su familia, ha creado recetas fáciles que lleva poco tiempo prepararlas.

“Siempre hay que hacer malabarismos en la cocina, pero lo sencillo no tiene por qué sacrificar el sabor”, explica Lala, cuyo nombre completo es Laura Díaz. 

La chef Lala dice que en ocasiones, debido al poco tiempo que se tiene para cocinar o por no saber preparar algún platillo, la opción de muchas personas es comer fuera de casa alimentos que no siempre son los más saludables.

“Es cierto que a veces resulta más económico comprar una hamburguesa, pero si lo hace con frecuencia, está poniendo en riesgo su salud”, advierte la también nutricionista.

Entre sus múltiples proyectos, Lala está colaborando en una campaña para Mazola, la compañía que promueve productos más saludables para preparar alimentos y que ahora ha lanzado los sobrecitos con saborizantes.

“Los latinos utilizamos mucho estos productos, porque ha sido una costumbre de familia que viene desde la casa de la abuela, de la mamá y al llegar a este país se sigue utilizando”, dice.

Aunque se sabe que el contenido de estos productos son altos en sodio, Lala defiende que el que representa, lleva como ingrediente la sal marina en su estado natural y no la procesada.

“El uso de la sal en las comidas también debe ser controlado por cada persona. Sabemos que todo en grandes cantidades afecta”, dice. “La diferencia de este producto con otros es precisamente el tipo de sal, pero también se disuelven mucho más fácil y rápido que los cubitos de caldo”.

La Chef Lala creó para esa compañía varias recetas fáciles en donde se puede hacer uso de este producto y que se pueden ver en www.mazola.com.

Así como ha sido una defensora de la comida saludable, la Chef Lala también lo ha sido de las recetas latinas mas tradicionales, lo cual podría resultar contradictorio. Pero en sus libros Latin Lover Life y Best Love Mexican Cooking With Chef Lala, ha dejado de manifiesto que se pueden comer los deliciosos pozole, los tamales o cualquier otro platillo que se le ocurra, pero con una preparación muy light y en determinadas cantidades.

Hace unas semanas, La Chef sacó al mercado una nueva línea de productos de salsas: aderezos y marinadas, preparadas de manera natural y pensadas en las personas con diabetes.

“En mi familia traemos muchos esta enfermedad; convivo con ella todos los días, porque mi papa, hermanos, sobrinos, tíos la padecen. Así que todo lo que hago esta relacionado con eso”, explica.

Lala cuenta que no fue fácil realizar este proyecto que fue pensado hace algunos años porque no encontraba una compañía que le interesara un producto realizado de manera natural.

“La comida saludable no es lo más popular del mundo y no había encontrado una compañía que compartiera mi misma visión”, dice.

Las campañas contra la obesidad, dice, han logrado efecto en la comunidad porque ahora se tiene más información y más recursos.

“La educación es parte fundamental. La gente ahora está más consciente del problema de la diabetes debemos seguir reforzando, es parte de la vida”, agrega.

Chef LaLa Targets Latino Diabetes With Healthier Recipes - Press Telegram

For many, Mexican food is thought of as a delicious splurge that throws off your daily caloric intake. But chef and nutritionist Chef LaLa is fighting that stigma as she creates healthy recipes without abandoning her Latino heritage and flavors.

Mushroom Silvestri is flavored with garlic, red wine and parsley to create a healthy side dish.For many, Mexican food is thought of as a treat, that delicious splurge that throws off your daily caloric intake leaving you feeling guilty.

But celebrity chef and certified nutritionist Chef LaLa is fighting that stigma as she creates healthy recipes without abandoning her Latino heritage and flavors.

The chef’s cookbooks “Latin Lover Lite” (Spencer Publications, 2004) and “Best Loved Mexican Cooking with Chef LaLa” (Publications International, 2008) are aimed at creating healthy ethnic cuisine.

But now she has taken it a step further by partnering with Merck, a global health care company, to launch Sazone Su Salud, an educational campaign designed to educate the Latino community about type 2 diabetes and to offer diabetes-friendly recipes.

“My part as a chef and certified nutritionist was to be able to speak about my experience,” says LaLa, whose birth name is Laura Diaz. “My position, personally, is not only of understanding what it is to live with a family member who has diabetes, but also of one that I have to take special precautions because I understand I’m predisposed to diabetes.”

LaLa got involved with the campaign because the disease runs in her family, and because it’s prevalent in the Latino community. Her goal is to make healthy recipes, suitable for those with diabetes, without having to give up the flavor.

“As a chef, I love to cook. I mean, I became a chef because I like to cook as much as I like to eat and I wanted to re-create the dishes that I love to eat,” she says.

And at the same time, because I’m a foodie it’s important that it tastes good. If someone gives me rice cakes to eat and says that’s what I’m stuck with, I’m not happy. I have a strong heritage and traditions - I didn’t want to forget them.

There are ways to create flavor without all the fat, says LaLa, such as using chiles, lime and cilantro. It’s also key to stay away from stuffing entrees with cheeses and creams, using more natural ingredients instead.

The chef recommends staying away from processed foods because they are high in fat and limited in nutrients.

It really boils down to a healthy cooking method and the quality of ingredients. I always say, if it comes from its own package like an apple, it’s a good idea,” LaLa says. “Cooking methods like boiling, baking, steaming, sauteing and also adding flavor mechanisms of the heritage like cilantro or lime or herbs or spices.

“There’s all kinds of fun and healthy solutions because what we want to do is to provide solutions to make your life better and healthier and have a better quality of life for you and your entire family,” LaLa says.

Type 2 diabetes disproportionately affects the Hispanic community in the U.S. Nearly one out of five Hispanic adults over the age of 50 reported having type 2 diabetes, which is among the highest prevalence for all racial/ethnic groups. In Los Angeles, Kern and Orange Counties more than 4.4% to 13.5% of Latino adults have been diagnosed with diabetes. Among U.S. regions with the highest Hispanic populations, California has the highest rate of type 2 diabetes among younger Hispanics aged 18 to 44 years (3.2% versus 1.3% for non-Hispanic whites in that age group).

“Through Sazone Su Salud and Chef LaLa, we hope to educate Hispanics about the serious health risks associated with type 2 diabetes and to raise awareness of diet steps they can make to help manage this complex disease,” said Stephen Clement, M.D., C.D.E., director, Medical Affairs for Diabetes, U.S., Merck. “We are excited to reach out to Hispanics and to encourage them to talk to their doctors about type 2 diabetes – whether they are already diagnosed with diabetes or are at risk.”

About the Latino Diabetes Initiative (LDI)

Diabetes is a disease of epidemic proportions. The World Health Organization estimates that 285 million people worldwide have diabetes, and that number is expected to more than double by 2030.

Although the disease has become more prevalent across all populations, it has been shown that diabetes adversely affects certain racial/ethnic groups. National data demonstrates that Latinos have a two-fold increase in the risk of developing type 2 diabetes compared to the Caucasian population.

A clear genetic predisposition for the development of diabetes is a major risk component. However, a significant role is also played by cultural and lifestyle factors.

The dramatic increase in the rate of diabetes combined with growth of the Latino population has created an urgent need for culturally and linguistically appropriate models of care and education. The Latino Diabetes Initiative (LDI) at the Joslin Diabetes Center was launched in 2002 and integrates culturally competent care, research, education and community outreach to improve the health outcomes of Latinos living with diabetes and for those who are at risk.

Laura “Lala” Diaz, a chef with a healthy approach to Latin cuisine, grew up eating her family’s authentic Mexican food and knows the flavors immediately.

“The whole idea of gourmet Mexican resonated with me — with the past, with my dad, with Colavita,” says Profaci. His father launched Colavita, famous for irs olive oils and Italian specialty products, in the 1970s as the marker began to embrace the concept of gourmet Italian food, and the younger Profaci was inspired to do the same with Latin: “Mexican food is a peasant cuisine full of flavor. You can create amazing things.”

Profaci started Good Stuff Marketing, LLC, dedicating the Madison start-up to the launch of Chef LaLa sauces and marinades. In March 2011, production began. 

The emphasis is on purity in Chef LaLa’s products and the fresh flavors that power through. The Orange Chipotle Marinade, with its fiery punch and sweet finish, is a stand out, as well as the kicky Tomato-Serrano Red Sauce.

The purpose of the conference is to empower our Latina and women business owners and professionals, said Mark Martinez, CEO at San Joaquin County Hispanic Chamber of Commerce, as he explained that their goal is “to educate them through workshops and information that will help them make improvements in their business as well as in their professional careers.”

Accomplished chef, cookbook author and certified nutritionist, Chef LaLa was the keynote speaker at the conference. She has been featured on shows like NBC Today, Univison and CNN.

I [have] been trying to bring her for two years, but what really triggered things is that I wanted to focus this year on health and wellness in the workplace,” said Martinez, “something that would enhance health and wellness and on how to balance career, family and health. Among other things, she’s a regular guest expert on Dale Con Ganas, the Univision show that is a Spanish–language version of NBC’s The Biggest Loser.

She will be in Stockton on Thursday to share her wisdom as the keynote speaker at the 11th annual Latina Business Conference hosted by the San Joaquin County Hispanic Chamber of Commerce.

The Hispanic chamber is emphasizing exercise, good health and nutrition this year. The theme for the conference is Health & Wellness in the Workplace.

LaLa, 42, grew up in Los Angeles as part of a family of restaurateurs. She says that the shared love and connection of family life is a key place where dietary decisions — both good and bad — play out.

My son came home one day and said, I don’t like greens. I don’t want anything green on my plate, LaLa said.

Maddox, her son, is 6. LaLa said she won him over with a trip to her modest backyard herb garden. She discovered that when he picked it himself, Maddox was willing to experiment.

I am promoting creativity and him actually allowing himself to create the dishes he wants, LaLa said. LaLa knows San Joaquin County because she has a brother who lives in Manteca.

She said she’s aware that San Joaquin County residents suffer from high rates of diabetes, obesity and other symptoms of poor diet. She says the solution is also close at hand.

You are so lucky in the Central Valley because you have so much access to fresh fruits and vegetables, LaLa said. It could be very easily a very healthy place.

LaLa admits that it is time–consuming to cook, and not everyone has learned the skills needed to turn produce into delicious dishes. That’s where she can help with recipes and suggestions on what to substitute for high–carb tortillas or high–fat fried dishes.

Cooking is not a convenient thing, she said. I am so glad that TV stations now are making cooking sexy.

Of course LaLa’s doing her part to make cooking sexy by appearing on shows such as Martha Stewart, The Today Show and Dr. Oz. She gushes with enthusiasm over exploring newly trendy ingredients such as kale or turmeric, and hits the gym to stay in shape, especially after she occasionally falls off the dietary wagon.

She says she is now completely Chef LaLa and virtually never uses her given name, Laura Diaz. No one calls me Laura except my mom when she’s mad at me, LaLa said.

LaLa said she plans to encourage the business leaders at the upcoming Stockton conference to make healthful food part of their lives.

Get your family involved in these things, LaLa said. Without you, there is no business. How productive is it to tell people to take care of business without taking care of themselves?
